Brian graduated the Culinary Institute of America, Hyde Park, NY in October 1991 with an Associates in Occupational studies. His focus was culinary and left room for much improvement in the world of Baking and Pastry. To become a well rounded “Chef” Brian worked for knowledge. He spent considerable time in some of New York’s top kitchens under the watchful eyes of some of the nation’s top chefs and pastry chefs perfecting his craft and falling deeper in love with the Dessert world.
His culinary background has taken him into the most high-profile kitchens from Long Island to New York and Washington, D.C.
Upon opening Sweet Karma Desserts in 2003, a boutique cake and pastry company, Brian was thrust into the cake world and found his true passion. A once dedicated restaurant Pastry Chef, he now concentrates on combining his 2 worlds of Art and Pastry with cake. Brian realized that the only difference was that now he was working with an edible canvas. He jokes often that “ He does edible arts and crafts all day long”. He is known for his over the top specialty cakes. His style is artistic, fun and full of life. Most of all the taste is amazing.
Most recently his “Cake Career” has opened doors for Brian. His talent has led to being chosen for 2 Halloween Food Network shows (Halloween Baking Championship S4 and Halloween Cake Off 2018).
